Tuma stringy for baked goods
DESCRIPTION: tuma filante is a fresh stretched curd cheese obtained from the processing of sheep and goat milk, modeled by hand and transferred into rectangular molds. Sweet and delicate in flavors and soft and elastic in texture.
FOOD PAIRING
The tuma filante is suitable for all baked preparations, pizzas, baked pasta, parmigiana, managing to give an enveloping flavor characteristic of sheep and goat's milk.
PROCESSING
The fresh milk from the morning milking and the previous evening is collected and brought to the dairy, heated to a temperature of 38 ° C, is inoculated with lactic ferments and subsequently curdled. For the production of this cheese, the milk is not pasteurized. Once the curd is obtained, it is broken into hazelnut and left to mature under whey for about three hours. It is then cut into strips and spun with water at a temperature of 85 ° C, formed by hand and transferred into molds. It is put on the market the day after processing.
